In addition Dobie has added inked comments on the first two pages: "1 sq. mile in U. S. Yards, 60,000 employees, none residents." "Visited Yards - Monday Aug. 2, 09, alone; stayed all day; saw everything; cattle themselves interesting sight." "Libby -McNeill & Libby - great sight, Armour & Co. - 75 acres in plant; best one to see." Apparently Dobie visited the Union Stock Yards in Chicago and made his comments based upon his visits and observations. This booklet was prepared as a souvenir for visitors to the processing plant of Swift & Company in Chicago and as a reminder of the modern processing methods of the American Meat Processing Industry as represented by Swift & Company. The booklet begins in the Hog Department, pork cutting, smoked meat department, the sheep and calf cooler, the beef cooler, sheep dressing, beef dressing, the lard department, the soap factory, etc. In all cases Swift & Company emphasize the care given livestock prior to processing them, the clean and safe conditions for employees, and the absolute care is provided to ensure that all meat for consumption is certified "U. S. Inspected and Passed." In 1906, Upton Sinclair's book "The Jungle" was published and it was an indictment on working conditions and safety in the meat packing industry. This is a well-preserved booklet in near fine condition.
